Coffee Cake
Ingredients
2 cups cake flour
2 cups sugar
1 box instant lemon pudding mix
1 teaspoon baking powder
¼ teaspoon cinnamon
¼ teaspoon soda
¼ teaspoon salt
2 sticks unsalted butter, melted and cooled
1 and ¼ cups ginger ale soda
¼ teaspoon vanilla
4 eggs , slightly beaten
3 Table spoons of sugar
1 teaspoon cinnamon
Directions
Preheat oven to 335 degrees. In a large bowl, sift together all dry ingredients. Add butter, ginger ale and vanilla. Stir. Add eggs and mix until smooth. Coat an 11 X 15 inch pan with cooking spray. Combine 1 teaspoon cinnamon and 3 Tablespoons sugar. Sprinkle ½ of cinnamon-sugar mixture on bottom and sides of baking pan. Add batter and sprinkle remaining cinnamon-sugar mixture over top. Bake 30 to 40 minutes or until wooden toothpick inserted into center comes out clean. Serve hot or cold.
