Cheesecake

Crust Ingredients


1 1/2 cups graham cracker crumbs
6 Tablespoons softened butter or margarine
1/3 cup sugar
1 teaspoon cinnamon

Directions

Combine and mix cracker crumbs, cinnamon and sugar. Add softened butter. Blend well. Turn into a 9 inch springform pan. Using the flat bottom of a glass, press firmly, making bottom slightly thicker than sides. Bake at 350 degrees about five minutes. Cool.


Filling Ingredients

4 packages (8 ounces each) of creamcheese
1 cup sugar
2 Tablespoons flour
1 teaspoon vanilla
4 eggs

Directions

Soften and beat creamcheese. Add vanilla, flour and sugar. Mix thoroughly. Add eggs one at a time and blend until just mixed. Pour into cracker shell. Bake at 350 degrees for approximately 50 minutes or until sides start to pull away from pan. The center will still be slightly moist. Remove from oven and cool. Refrigerate for at least four hours. Remove the pan spring rim. Top with your favorite fruit pie filling and serve.
