Grilled Chicken and Summer Vegetables

Ingredients


1/4 cup olive oil
3 tablespoons honey
2 Chicken Flavor Boullion cubes or 2 teaspoons granules
1/2 teaspoon dried rosemary, crushed
4 skinless, boneless chicken breast halves
3 medium tomatoes, halved
3 yellow squash, halved lengthwise

Directions

In a small glass bowl, combine oil, honey, boullion and rosemary. Cook in Microwave on high for 1 minute or until hot. Stir well and let stand for 15 minutes. In plastic bag, pour half of the marinade over chicken, seal bag and let marinade for 30 minutes at room temperature. In medium bowl, toss vegetables with remaining marinade. Grill vegetables until lightly charred and slightly softened. Cut vegetables into large chunks. Place vegetables on serving plater and cover with foil. Remove chicken from marinade and grill until fully cooked. Place chicken on vegetables, garnish with fresh rosemary if desired, and serve.
